A quick fav for a pot luck, or think outside the box and use as a topping for fish or a vegetable dish.
About 10 minutes total time
2 plum tomatoes, diced
1/2 red onion, minced
3 ripe avocado
1 T lemon juice
1 T lime juice
1T cilantro
1/2 t sea salt
1/2 t cayenne (makes mild to medium heat, my “spice canary” didn’t complain)
Chop and mince onion and tomatoes, put in large bowl. Core the avocado and place in bowl. Mash to a paste with a potato masher. Add remaining ingredients and mix well. Let stand a bit to let the flavors coalesce.
